Black Bean Hummus

Introduction

This is great with veggies as well as whole grain flat breads This is great with veggies as well as whole grain flat breads
Number of Servings: 6

Ingredients

    2 15 oz cans black beans (drained and rinsed)
    1/2 cup onion
    3 garlic cloves peeled
    2 tsp lemon juice
    2 tsp olive oil (extra virgin)
    1 tsp cumin, ground
    1/4 tsp cayenne (more or less depending on how hot you like it.
    1/2 tsp ground black pepper
    1/4 tsp salt
    about 3 tbsp cilantro or more if you like it

Directions

open beans and rinse in colander toss in the food processor with all the other ingredients except for the cilantro. Puree until smooth (about 2 minutes)
add the cilantro and process for about 15 seconds.

makes 6 1/2 cup servings

  • Made it without the salt or cilantro. I like the sharpness the raw onion and garlic add. Decided to toss in some tahini to see if it would add a little more depth. It is very good with or without the tahini although I preferred it with. Definitely will make again. - 10/8/11
