Crustless Turkey Spinach Quiche

Ingredients

    10oz. Extra Lean Ground Turkey
    4 slices Extra Lean Turkey Bacon (diced)
    1C. chopped onion
    6C. fresh spinach
    1/4C. 2% shredded colby/monterey jack cheese
    1C. Egg Beaters
    1/4C. Fat Free milk
    1/4C. Fat Free cottage cheese
    1/4C. quick cooking oatmeal
    2 tsp. flax seeds
    dash black pepper (optional)

Directions

1. Preheat oven to 350 degrees. Spray 9" to 9-1/2" pie plate with non-stick cooking spray and set aside.
2. Add ground turkey, diced turkey bacon and chopped onion to heated (medium-high) skillet. Cook until ground turkey is almost cooked through. Add spinach to pan and continue cooking until spinach is wilted and ground turkey is no longer pink.
3. Drain off any excess liquid from the skillet and put turkey/spinach mixture into pie plate. Sprinkle the shredded cheese over the turkey/spinach mixture.
4. In a separate bowl combine Egg Beaters, milk and cottage cheese. Grind the oatmeal and flax seeds in a coffee grinder and add to the Egg Beaters mixture. Whisk to combine and add dash of black pepper, if desired.
5. Pour over turkey/spinach mixture in pie plate and bake for 40 minutes or until knife inserted in center comes out clean.
