Introduction

Ingredients

    3tsp minced garlic
    1/2 cup green onions
    1/8 cup chopped parsnips
    1/8 cup chopped carrots
    1 small stalk of celery shopped (with leaves
    1/4 yellow bell pepper chopped
    2 fresh mushrooms chopped
    1 cup chopped cabbage
    1 tbs canola oil
    1tbs olive brine (juice)
    1/4 cup part skim shredded mozzarella cheese
    1 pita, halved
    22 roasted almonds

Tips

Use any veggies you have in the fridge. Very flexible!


Directions

Stirfry all veggies in canola oil. As oil dries up, add olive brine, stir. Add Mozzarella cheese and almonds, stir, and place pita bread on top to warm as cheese melts. Divide cooked veggies in 2, fill pita bread, eat!

Serving Size: Makes 2 pita sandwiches
