Spaghetti Squash Alfredo

Ingredients

    1 Spaghetti squash

    1/4 cup plain non-fat yogurt

    4 TBS non-fat sour cream

    1/2 cup non-fat shreddded mozzarella

    Herbs and spices to taste

Directions

Cut the squash in half, remove seeds, and place cut side down in a shallow baking dish with about 1/2 inch water. Bake at 375 F for about 30 minutes. Let cool enough to handle and scoop out the meat.

Mix together the yogurt and sour cream and add your choice of seasonings (I usually use basil, garlic, and just a bit of cayenne pepper). Toss the squash with the sauce and top with mozzerella. Put it back in the oven or microwave to melt the cheese.

This makes 4 generous main course servings or 8 side dish servings.

You can also add any veggie or meat topping you like just as you would with any pasta dish.
