Introduction

I made this recipe which was a combination of some other recipes - it came out delicious and filling! I made this recipe which was a combination of some other recipes - it came out delicious and filling!
Number of Servings: 10

Ingredients

    1 Tbsp Extra Virgin Olive Oil
    2 stalks celery, chopped
    1 onion, chopped
    1 cup chopped carrots
    Cannellini beans, 15 oz can
    Light Red Kidney Beans, 15 oz can
    2 cups low-sodium chicken broth
    2 cans crushed tomatoes (28 ounces each)
    1/2 tsp oregano
    1 tsp basil
    1/4-1/2 ground black pepper
    1/2 cup ditilini pasta
    3 Tbsp fresh grated parmesan cheese (apply right before serving)

Directions

Heat oil in pan and lightly saute onion, carrots, celery. Add beans (I did drain and rinse them) and the crushed tomatoes, chicken broth, and spices. Heat until simmering. 10 minutes before serving, stir in pasta. Serve with fresh grated parmesan on top. Yum!
