Rice Surprise

Introduction

Using leftover rice and miscellaneous pantry ingredients I came up with this recipe. Using leftover rice and miscellaneous pantry ingredients I came up with this recipe.
Number of Servings: 4

Ingredients

    1 cup brown rice, cooked
    1 large carrot, chopped
    1/2 cup frozen peas
    1 small onion, chopped
    2 cloves garlic, minced
    1/2 large parsnip, chopped
    1/3 cup dried cranberries
    1 oz pecans
    1 tb olive oil
    1 tb honey
    2 tsp madras curry powder

Directions

In a skillet heat olive oil. Add onion, garlic, carrot and parsnip. Cook until veggies are softened. Make sure not to burn the garlic.

Add peas, cranberries, pecans and rice. Stir to combine and allow to heat through.

Flavor with honey and curry powder.

Makes 4 servings.
