Introduction

Number of Servings: 10

Ingredients

    2 lbs lean ground beef, browned and rinsed.
    1 medium onion, diced
    1 can of Rotel diced tomatoes with Jalapenos
    2 cans of diced tomatoes
    1 can of corn
    2 cans of french cut green beans
    2 cans of kidney beans, drained
    1 64-oz bottle of low sodium V8 juice

Tips

Freezes really nicely. Can be made with turkey or chicken. Original recipe calls for two cans of corn, but I use only one.


Directions

Brown hamburger. Drain fat and rinse until water drains with little to no fat. Return to pan and heat with salt, pepper, garlic powder. Drain and rinse kidney beans and add to beef. Add all other ingredients, no need to drain. Bring to boil and then simmer until kidney beans are soft.

Serving Size: Makes 10 15-oz servings
