1 bag Broccoli Slaw mix, or green cabbage
1 medium jicama, slivered
1 mango or peach, slivered
1 sw red or green bell pepper, thinly slivered
1-2 carrots, thinly slivered
3 tbsp diced red onion
1-2 cloves garlic, minced
3 tbsp lime juice, or to taste
1 tbsp honey
Salt and pepper, to taste
Red Pepper flakes to taste
Optional - sugar to taste
Makes about 8 1-cup servings.
If you like things hot you can add some cilantro and/or chilli's.
Note: Jicama is a Mexican root vegetable that lookes a lot like a potato and tastes like a cross between a potato and an apple. They are very low calorie.
