Introduction

Number of Servings: 6

Ingredients

    2 large plum tomatoes
    1/4 cup finely diced red onion
    2 Tbsp chopped cilantro
    1/2 cup frozen corn, roasted in hot skillet for 1-2 minutes, stirring constantly to "char"
    1/2 tsp salt
    1/4 tsp pepper
    juice of 1 lime

Directions

Dice tomatoes, add to bowl with onion, roasted corn, cilantro, salt and pepper. Toss with lime juice and refrigerate.

Serving Size: yields 2 cups, serving size = 1/3 cup
