In the mood for beans and greens but with even more substance - I added tuna and a tablespoon of goat's milk feta. Quick, easy and fit's in for a healthy dinner.
Number of Servings: 2

Ingredients

Spinach, fresh, one full bag - 5.5 cup
Del Monte Diced Tomatoes, No Salt Added, 1 cup ( I used what I had frozen from making oven roasted tomatoes - all the insides)
Beans, Bush's Cannellini Beans, one full can drained and rinsed.
Bumble Bee Solid White Albacore in Water one 5 oz can drained.
PC Crumbled Goat's Milk Feta Cheese, 2 tbsp (1 T per serving)
Not included in calculations - I seasoned with homemade basil pesto - but season with whatever herbs you prefer.

Tips

The sodium may be lower because I rinsed the beans and drained the tuna. A quick high protein meal.

Directions

Begin by heating the diced tomatoes, add the can of cannellini beans well rinsed and drained.
Then add the tuna well drained.
Add herb seasonings.
Heat till it's all steamy, add the spinach and top with a lid until it wilts, gently stir together with a cooking fork and spoon.
Divide in half to share or have for another day. Top each serving with a tablespoon of goat's milk feta cheese crumbled. And then enjoy for a filling meal.

Serving Size: 2 servings for a complete dinner
