1/2 cup cracked wheat (bulgur)
1 cup fresh flat-leafed parsley finely chopped
1 small onion finely chopped
1 medium tomato finely chopped
2 TBS fresh lemon juice
2TBS olive oil
1/2 tsp freshly ground black pepper
2. Combine the bulgur, parsley, onion, and tomato in a bowl.
3. For the dressing, combine all the ingredients in a sdre top jar, shake well.
4. add the dressing to the bulgur mixture and toss lightly to combine.
