Crustless Quiche

Introduction

Heart healthy quiche using whatever vegetables you have on hand! Heart healthy quiche using whatever vegetables you have on hand!
Number of Servings: 8

Ingredients

    1 c. nonfat milk
    1 c. egg substitute
    1/4 c. Heart Smart Bisquick Baking Mix
    1/4 c. shredded sharp cheddar cheese
    1 tsp. tabasco sauce
    1/2 tsp. Mrs. Dash Salt Free Seasoning
    1 c. fresh mushrooms
    1 c. fresh onions
    2 c. fresh spinach
    1 tsp. olive oil

Directions

In a large skillet, sauté the onion, mushrooms, and spinach (or any veggies you like) in 1 tsp. of olive oil or Pam, if you prefer.

While the veggies are cooking, mix the rest of the ingredients in a medium sized bowl. Mix well, encorporating the bisquick in as well as possible (there will still be lumps - no problem).

When the Veggies are lightly sautéed, put them in a lightly greased pie plate. Gently pour the egg mixture over the veggies.

Bake at 350 degrees for about 45 minutes. Makes 8 servings.
