lemon Chicken rice Soup

Ingredients

    3 quarts chicken broth
    4 cups chopped cooked chicken
    1 cup uncooked brown rice
    3 lemons juiced to equal 1 cup
    2 cups chopped fresh spinach
    1 cup chopped carrots
    1/2 cup chopped onion
    1 tablespoon olive oil
    1 cup chopped mushrooms

    In a large pot heat the oil. Saute the onion, mushrooms, and carrots until onions are clear. Add broth and lemon. Bring to a boil add rice bring to a boil again. Cover and simmer 20 minutes. Add spinach and chicken simmer 5 more minutes.
