Peel the apples and cut in very tiny pieces. In a bowl beat eggs and sugar until thick. Add the softened butter, mix. Add flour and baking powder. Add a dollup of cognac if you desire.
Gently add the apples and mix. Pour into greased pan and bake in oven for 1 hour (350 degrees).
Serve plain or with whipped cream
