Introduction

Number of Servings: 15

Ingredients

    2 medium onions, chopped
    4 garlic cloves, chopped
    2 cans chicken stock
    1 1/2 cans water
    1 can diced Italian style tomatoes
    1 can great northern beans
    1 cup fresh cleaned lentils
    2 bay leaves
    1 lemon zest
    4 medium red potatoes, cubed
    8 cups raw, baby spinach

Directions

saute onions and garlic until tender and then add everything together except the potatoes and let simmer for 1 hour. add potatoes 15 minutes before serving.
