Delicious creamy chicken salad loaded with flavor! Delicious creamy chicken salad loaded with flavor!

Ingredients

    4 oz chicken breast, diced
    1 tbsp mayonnaise
    1 tbsp sour cream
    1/4 c diced red onion
    2 tsp chopped fresh cilantro
    1 tbsp curry powder
    1 tsp grated fresh ginger root
    pepper, to taste
    1/4 c cashews or peanuts (optional)

Directions

This is a NO COOK! Using precooked chicken makes this super quick and easy! Combine all ingredients except lettuce leaves. Serve wrapped in lettuce leaves. This is a fun appetizer or light lunch. *For extra kick add 1-2 tsp of sambal oelek - soooooo yummy! Makes enough for 2 appetizer servings or 1 lunch serving.
