Hummus

Ingredients

    3 cans chickpeas (540 ml cans), drained and rinsed
    2/3 cup tahini, well stirred
    1/2 cup lemon juice
    1/4 extra virgin olive oil
    1/2 cup water
    4-5 cloves garlic (or more to taste)
    1/2 tbsp salt
    1/2 cup chopped fresh parsley

Tips

Lasts up to a week in the fridge. Can freeze up to three months.


Directions

Add all ingredients except parsley in a food processor, blend until smooth (or desired consistency). For a smoother hummus, add a little more water
Add fresh parsley as garnish, can also drizzle EVOO on top if desired

Serving Size: Makes approximately 12 cups, serving size is 1/2 cup
