Soybean Chili (Daniel Fast/ Vegan)

Introduction

An attempt to increase our protein intake on the Daniel Fast, using yellow soy beans in a thick, rich, very hearty vegetarian chili. Actually, VERY tasty. Best with all organic ingredients.

Number of Servings: 12

Ingredients

    Onions, 2.5 large - chopped
    Celery,4 stalk with leaves, large (11"-12" long) - chopped
    Green bell peppers, 2 large - chopped
    *garlic minced - christopher ranch in water, approx 4 tsp
    *Extra Virgin Olive Oil, 3 tbsp, approx.
    *Green Chili, Hatch, 4 oz can - chopped
    *Muir Glen Tomato Puree, 1 large can
    *Tomato, diced, Muir Glen, 1 large can
    *BLACK BEANS, 15 oz. can, undrained
    *Kidney Beans, 15 oz can, undrained
    *Yellow soy Beans, cooked, 5 cup drained (reserve some cooking liquid)
    Seasonings to taste: cumin, chili powder, pepper, cinnamon and salt.

Tips

Nice when served over quinoa (cooked separately in rice cooker). Or with corn chips.

Directions

Saute onions, celery, green peppers, and garlic in olive oil until tender. Combine with all remaining ingredients in 6 quart crock pot, stir. Season to taste [do not add salt until after cooking]. Add liquid from soy beans to desired thickness. Set for "high" for four hours, then to warm until serving.
When cooking complete, stir gently yet thoroughly, add salt; stir; adjust other seasonings to taste.

Serving Size: Makes approximately 6 quarts (24 cups), so probably about 12 servings.
