Crockpot Mexican Chicken

Introduction

I made this with regular Cream of chicken soup simply because I didn't have the 98% FF version. Using that should cut another 40 cals per service. I made this with regular Cream of chicken soup simply because I didn't have the 98% FF version. Using that should cut another 40 cals per service.
Number of Servings: 8

Ingredients

    1 pound chicken, cubed
    1 medium onion, diced
    1 cup salsa
    1 can Rotel tomatoes & chilies
    1 15 oz can black beans, drained and rinsed
    1 TBSP taco seasoning (I use a home made blend to lower sodium content)
    15 ounces of frozen corn
    1 can Cream of Chicken Soup
    1 cup light sour cream

Tips

Remember that using a healthier soup version will reduce your calorie content.


Directions

Place all ingredients in crockpot and stir. Cover and cook on low for 4 hours. Before serving add sour cream and stir until melted in. Stir and serve!

Serve over rice or on a bowl as is!

Serving Size: approx 1 1/2 cups
