Rachael Ray's Mac n' Gouda with Cauliflower

Ingredients

1 lb elbow macaroni
2.5 c cauliflower
1 T evoo
2 T unsalted butter
1 small onion, chopped
3 T flour
1/2 t cayenne pepper
1 t paprika
3 c milk (I use nonfat)
1 c chicken broth
3 c grated gouda
1 T dijon mustard
Salt and fresh ground pepper
*1 c bell peppers (my own addition- any kind on hand)
Tips
Directions
Bring large pot of water to boil. Add pasta, cook 5 minutes. Add cauliflower and bell peppers, cook 3 more minutes or until pasta is al dente.
While pasta cooks: heat large saucepan over medium-low heat. Add EVOO and butter until melted. Add onions and cook for 3 minutes. Raise heat; whisk in flour, cayenne and paprika. Whisk until roux bubbles, then cook 1 min more. Whisk in milk and stock, raise heat a little more so mixture comes to a quick boil. Once it begins boiling, drop heat so that it simmers; simmer for 3-5 min until thickened.
Once sauce thickens, add cheese and whisk in until smooth. Add mustard, adjust seasonings (salt/ pepper). Pour sauce over pasta/veggies and combine well. Serve.
