Shrimp Etouffe

Ingredients

    1 large onion - chopped
    2 cloves garlic - minced
    1 small bell pepper - chopped
    1/2 cup celery - chopped
    1 tbsp dried parsley
    2 tbsp flour
    1 lb shrimp - peeled and deveined
    1 cup water
    2 cups cooked brown rice

Directions

Melt butter and saute first 4 ingredients until soft

Add flour and stir until golden brown

Add shrimp

Add 1 cup water and bring to boil

Lower heat and simmer for 10 minutes

Add parsley and simmer for an additional 5 minutes

Serve over cooked rice

Serving Size: makes 4 servings of 4 oz shrimp with 1/2 cup rice
