Clam Chowder for one

Introduction

A quick healthy lunch soup when you're home alone! A quick healthy lunch soup when you're home alone!
Number of Servings: 1

Ingredients

    1 6-1/2 oz. can of clams (do NOT drain)
    2 tablespoons chopped celery
    2 tablespoons chopped onion
    1/3 cup 2% milk
    1 teaspoon cornstarch
    Freshly ground pepper

Directions

1. Empty can of clams, juice and all into a small saucepan. Add the celery and onion and simmer until celery and onion are done to your liking.
2. Dissolve the cornstarch in the milk and stir into the soup. Return to a boil stirring constantly. Then remove from heat.
3. Pour into a bowl and enjoy with plenty of freshly ground black pepper!

Note: If you aren't concerned about the starch calories, you can add some chopped raw potato when you add the celery and onion, but you will have to count it separately -- it's not included int the nutrition count.
