Garden Harvest Soup

Number of Servings: 10

Ingredients

    1 Tbsp Olive Oil
    1 Cup Onions chopped
    1 Cup Carrots sliced
    4 Cloves Garlic minced
    1 Cup Red Bell Peppers sliced
    8 Cups Low Sodium Chicken Broth
    3 1/2 Cups Diced Tomatoes (fresh or canned un drained)
    1 Cup Cabbage shredded
    2 Cups Water
    4 Tbsp Fresh Parsley

Directions

Cook onion in oil until transluscent. Add garlic, carrot and bell pepper. Cook until tender. Add all other ingredients (except Parsley) and simer uncovered for 20 minutes. Season to taste with salt, pepper and hot sauce. Top with fresh Parsley.
