Tilapia in Mustard Cream Sauce

Ingredients

12 oz Tilapia (3 pieces 4 oz each)
1/2 tsp fresh or freeze dried Thyme
1/2 tsp Black Pepper
1/2 tsp Salt
3/4 cup Low Sodium Chicken Broth
8 oz sliced fresh Mushrooms
2 Tb Light Whipping Cream
2 Tb Dijon Mustard

Tastes great with Steamed Broccoli.
Directions
Sprinkle fish with thyme, pepper, and salt. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add fish; cook 2 to 3 minute on each side until just done, removed from pan and tent with foil. Do not clean the pan, add mushrooms and cook a few minutes until they start to "sweat" and begin to shrink. Add broth and bring to a boil then reduce heat so mushrooms and broth simmer 5 minutes. Add cream and mustard to pan; stir with a whisk until well combined. Cook 1 minute or until thoroughly heated. Add fish back to pan, cook another minute to ensure fish is hot. Serve sauce over fish.
