Ingredients

    20 jumbo shrimp, peeled & deveined
    egg white
    1/2 cup bread crumbs
    cilantro 1 tsp chopped
    salt

    1/2 tsp grated ginger

    Sauce
    # Sauce:
    # 1 cup orange juice
    # 1 tablespoon chopped fresh cilantro
    # 2 tablespoons reduced-fat mayonnaise
    # 1 1/2 tablespoons fat-free, less-sodium chicken broth
    # 1 teaspoon grated peeled fresh ginger
    # 1 teaspoon fresh lime juice
    # 1/2 teaspoon ground cumin
    # 1/4 teaspoon salt
    # 1/4 teaspoon ground red pepper

Directions

toss shrimp in the bowl of egg white, then shake up in the bag of bread crumbs.
Fry in olive oil about a minute & a half each side.

Serving Size: Makes two servings of 10 shrimp
