Banana Oat Muffins

Ingredients

3 C all-purpose flour
2.5 C oats
1 C sugar
1 tbsp and 1 tsp baking powder
2 tsp baking soda
1 tsp salt
1/2 C egg beaters
2/3 C vegetable oil
1 tsp vanilla
4 large bananas, mashed
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp nutmeg
Tips
Directions
1. Combine flour, oats, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
2. In a large bowl, beat the egg beaters lightly. Stir in milk, oil, and vanilla. Add the mashed bananas and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line muffin tins with paper baking cups and put 1/4 C mix into each cup.
3. Bake at 400 degrees for 18 to 20 minutes.
Serving Size: 1/4 C muffin mix in each muffin tin
