White Chicken Chili

Introduction

Number of Servings: 4

Ingredients

    4c. great northern beans, soaked overnight and cooked without salt, or about 2 cans rinsed and drained
    1- 15oz can of chicken breast
    2.5c. unsalted chicken broth
    1 medium onion chopped
    3 cloves garlic or 1.5 Tbsp minced jar garlic
    1.5 tsp cumin (I have ground)
    1/8-1/4 tsp cayenne pepper (to taste)
    1/8-1/4 tsp white or black pepper
    1- 4.5 oz can chopped green chilis
    1 Tbsp oil

Tips


Directions

saute onion in oil until translucent, add garlic and saute for an additional minute. Add broth, beans, chicken, chilis and spices. Cook until heated through, or heat in a slow cooker until ready to serve.
