2 cups all-purpose flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tblsp shortening
1 tbsp grated orange peel
3/4 cup orange juice
1 cup cranberries,chopped
1/2 cup walnuts, chopped
Mix flour,sugar,baking powder,and baking soda.
Beat in orange peel,shortening, orange juice, and egg. Mix till well blended.
Stir in cranberries and nuts. Turn into a 9x5 loaf pan greased on bottom. Bake for 55 min or till
toothpick inserted in middle comes out clean.

I use the same recipe with one or two changes in preparation. Chopped cranberries are soaked in hot water to soften pre-baking for about 10 minutes, strained and dried off.
I also bake at 325 degrees F - to allow maximum loaf height. I don't mix nuts in batter, I sprinkle on top for nut crust. - 12/19/11
