Italian Meatloaf

Introduction

I calculated the nutrition info using all extra lean ground beef instead of 1/2 ground venison also. The total calorie count increases to 171 with all ground beef. I've made this with both all ground beef and 1/2 beef 1/2 venison and it is delicious either way. My husband who hates meatloaf says it's the best he's ever tasted. Better than either of our mom's! Ingredients

    1 C boiling water
    1/2 C sun dried tomatoes
    1/2 C ketchup
    1 C italian bread crumbs
    1/2 C finely chopped onion
    1 Tbsp basil
    1/2 C shredded Provolone Cheese
    2 Large Egg Whites
    1/2 lb extra lean ground beef
    1/2 lb ground venison
    2 cloves minced garlic
    1/3 C ketchup



Directions

Preheat oven to 350 degrees.

Combine boiling water and sun dried tomatoes in bowl and let stand 30 min or until soft. Drain tomatoes and finely chop.

Combine 1/2 Cup ketchup, breadcrumbs, onion, basil, cheese, egg whites, garlic and meat in a large bowl and mix well. Add tomatoes mixing until well blended.

Shape meat mixture into 9x5 in loaf and place in baking dish or broiler pan coated in cooking spray. Spread 1/3 C ketchup over meatloaf. Bake 1 hr. Let stand 10 min before slicing. Cut into 12 slices.
