Ingredients
-
4 - 3oz Salmon Filets
Newmans Owns Lemon Mairanade 4 tablespoons
1 Extra large Onion sliced
1 C Red Bell Peppers
1 C Green Bell Peppers
1 C Fresh Broccoli Spears (bite size )
1 C Fresh Cauliflower (bite size)
Dash of Black Pepper
1 Garlic Cloved Diced
Directions
Prep-you can do this ahead of time before you take off on your camping trip, slice up onions, bell peppers, broccoli into bitsize pieces not really chopped but small and cauliflower also into bit size pieces and of course dice up the garlic clove you can put this all together in one ziplock back, mix it up and divide evenly into four when ready to cook.
You will need aluminum foil pouches (double up ) 4 of them. You will end up with 4-3oz salmon filets. Place one in each of the aluminum pouches, add your onions/veggie mixture on top of the salmon filets then add the marinade 1 tbsp on each pouch if you add to much it will seep out. Place them in on the campfire in a grill basket for about 15-25 minutes, they will cook in the steam :) It is soo good, we served it over rice. It was delicious!!!! Enjoy!!!
