IntroductionThis is my go to meal when I feel like I really can't stop eating. This satisfies my need for a large volume of food without blowing my calories out of the water! 12 Carb Balance Whole Wheat Tortillas
1 pkg of McCormick Fajita Seasoning Mix
3 plum tomatos
2 Green Bell Peppers
1 large white onion
1 1/2 cups of fresh mushrooms
I like to coat my tortilla with about 1/2 tsp of guacamole and 1 tsp of sour cream ... the flavor is out of this world! But these are not included in the calories shown above so don't forget to add them to your calorie intake for the day if you add them!
Cut all other veggies into bite size pieces.
Use a LARGE pot or I like to use a WOK and heat up on medium high heat.
Spray with Non-Stick cooking spray.
Pour veggies in and let cook for about 10-15 minutes depending on how crunchy you like them.
After the veggies are at the desired consistency, add 1/4 cup of water and the seasoning mix.
Cook for an additional 5 minutes and Serve!
Serving Size: makes 6 2-tortilla w/ 2 TBSP of veggies on each
