Three Bean Salad

Number of Servings: 12

Ingredients

    Salad:
    1 can garbonzo beans, drained & rinsed
    1 can black beans, drained & rinsed
    1 can red kidney beans, drained & rinsed
    1 can diced tomatoes, drained & rinsed
    1 large white onion, chopped
    1 medium cucumber, diced
    1 jar red pimentos, sliced

    Dressing:
    1 tbsp honey
    1 cup white vinegar
    1/4 cup canola oil
    1 teaspoon salt
    1/2 teaspoon pepper

Directions

1) Combine Salad ingredients in a large bowl.
2) Combine Dressing ingredients in a jar and shake well to mix.
3) Pour Dressing over Salad and toss to combine.
4) Refrigerate until ready to serve.

Serving Size: Makes 12 servings of 168 grams each.
