A quick and easy dinner that is also low-fat. A quick and easy dinner that is also low-fat.
Number of Servings: 4


    1lb chicken breast boneless, skinless
    1 package frozen broccoli, broken apart
    1 Tbsp unsalted butter
    1 cup chopped onion
    1 cup celery
    4 cloves garlic minced
    1 cup fat free half & half
    1cup broth from chicken
    1 Tbsp corn starch
    4 Tbsp ground flax seed
    white pepper
    1 cup reduced fat shredded cheddar cheese


Boil chicken breast until done and drain. Saute onions and celery in butter 2 minutes, add garlic. Remove from heat. When chicken is cool enough to handle, cut into 1-inch pieces. Mix half & half, chicken broth cornstarch, flax seed, salt, and pepper in a sauce pan, bring to a boil, reduce heat, cook and stir until thickened. Add broccoli, onion, celery, garlic and chicken mix well. Pour in 2 quart casserole, Sprinkle with cheese. Bake at 350 for 20 minutes or until cheese is melted. Serves 4.
