Ingredients

    2 servings of tortilla chips (Guiltless Gourmet)
    1/2 cup black beans, drained, rinsed
    6 oz chicken, cooked
    2.5 oz. Mexican Shredded Cheese
    1 tomato, diced
    1 tbsp. cilantro
    1 cup salsa
    1/4 cup greek yogurt
    scallions (optional)

Directions

Preaheat oven to 350

In a baking dish, line bottom with 18 chips, 1/4 cup of black beans, 3 oz. chicken, tomato, 1 oz cheese, repeat layer with remaining ingredients.

Bake in oven for 5 - 7 minutes until cheese is melted

Top with salsa, greek yogurt and scallions
