Southwest Chicken

Introduction

Black beans, corn and diced tomatoes with Jalapenos...all over chicken! Done in less than 30 minutes! Black beans, corn and diced tomatoes with Jalapenos...all over chicken! Done in less than 30 minutes!
Number of Servings: 6

Ingredients

    600 grams of chicken breast, approximately two half breasts.
    1 can of black beans drained
    1 can of corn
    1 can of diced tomatoes with jalapenos
    1 tsp cumin
    Spray of olive oil.

Tips

Rotel works great in place of tomatoes, use cumin to taste. If you don't have black beans, use kidney, black eye peas, anything!


Directions

Spray chicken breasts with olive oil, brown in pan. When both sides are browned, drain black beans and pour over top, then pour tomatoes and corn over and sprinkle with cumin. Simmer for 25 minutes.
