Deb's Fabulous Thai Curry Chicken

Ingredients

    2 lbs boneless/skinless chicken breasts cut into 1/2" pieces
    1.5 T oil
    1 t salt & pepper
    2 T curry powder
    1 onion thinly sliced
    2 cloves garlic, crushed
    2 14 oz can coconut milk
    1 8 oz can tomato sauce
    3 T sugar
    1 t ground ginger
    1 c lite yogurt

Directions

1. Season chicken pieces with salt and pepper
2. Heat oil & curry powder in large skillet over medium heat for 2 minutes.
3. Stir in onions, garlic, ginger cook for 1 minute
4. Add chicken, reduce heat and cook for 7 - 10 minutes
5. Pour coconut milk, tomato sauce, sugar, yogurt into pan & stir, bring to a boil.
6. Add corn, water chestnuts, bamboo shoots, mushrooms, green beans. Stir to combine, cover and simmer, stirring occasionally for 30 - 40 minutes
