Banana Nut Muffins/Bread

Number of Servings: 12

Ingredients

    1 1/2 Cup Stone-ground whole wheat flour
    1/4 cup ground flax seed
    1 1/4 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt (optional- not used in calculation)
    1 tsp vanilla
    1/4 cup of pure maple syrup
    1/3 cup of unsweetened applesauce
    2 large eggs
    2 Tbs skim milk
    2 mashed over ripe medium bananas
    1/8 cup chopped cashews (or any nut)
    1/8 cup grated unsweetened coconut

Directions

Preheat oven to 350.

Stir together flour, baking poweder, soda and set aside.

In a mixing bowl, beat syrup and applesauce with an electric mixer, scraping bowl and sides. Add one egg at a time and then the milk, beat until smooth. Alternate adding flour mixture and bananas and beat until well mixed. fold in nuts and coconut .

Bread = Turn batter into a lightly greased (0 calorie spray)8x4x4 inch loaf pan. Bake at 350 for 60-65 minutes or until wooden toothpick comes out clean. Cool in pan for 10 minutes. Remove from pan and allow to cool. For easier slicing, wrap and store overnight in the refrigerator. Can be frozen. Makes 12 slices.

Muffins = Grease (0 calorie spray) 12 muffin tins (or use foil liners). Spoon mixture into muffin tins. Bake at 350 for 30-35 minutes or until toothpick comes out clean. Cool in pan for 10 minutes. Store in food storage bag.
