Chicken and Yellow Rice

Introduction

A simple microwave recipe that really tastes great and takes less than 1 hours to cook, so I have included it here. The yellow colour in the rice comes purely from the chicken stock and vegetables it is cooked with, which really give it the remarkable flavour. The fat content is 11g in this but only because I followed the origional recipe which askes for 3 Tblsp olive oil, but this can be cut back, especially as it is a microwave recipe. Ingredients

    6 x 175g (about 1 kilo) boneless chicken pieces, diced
    1 onion, chopped
    2 green peppers, chopped
    garlic
    3 Tblsp olive oil
    350g rice
    4.5 cups hot chicken stock
    salt, pepper
    3 tomatoes, peeled & chopped

Directions

In large casserole combine onionb, capsicum, garlic & oil & cover & cook on High for 4-6 minutes, stirring once.
Add chicken, stir, recover & microwave on High for 5 minutes, stir once.
Add rice, stock & seasoning & cook on High for 10 minutes.
Stir casserole, cook on medium, covered, 10 minutes. Stir in chipped tomatoes. Cover & allow to stand 5 minutes.

Serving Size: serves 4 -6
