Collard Wrapped Cod

Ingredients

    8 Large Collard Leaves
    1 lb. Boneless Skinless Cod Fillet, rinsed, patted dry
    3 tsp olive oil

Directions

Wash collard greens and remove stems. Stems can be used in other recipes. Boil large pot of water and submerge 2-3 whole collard leaves for 1 minute or until softened but not over-cooked. Remove leaves from water and rinse with cold water to cool. Place each leaf on a plate one-on-top-of-the-other. Repeat with all leaves.
Wash cod, rinse and pat dry. Cut cod into 2 oz. pieces (size 1x3").
Place cod vertically on top, centered on collard leaf. Fold bottom of collard leaf up over cod, fold side, then fold top, then roll cod bundle to wrap tightly.
In large non-stick skillet, heat 1 tsp oil. Add 4 collard wraps seam side down, cover and cook undisturbed for 7 minutes. Remove pan from heat and let sit covered for 1 minute and then plate wraps. Repeat for all wraps.
Finally, add a little water to bottom of skillet and create sauce.
