Thick Vegetable Soup

Ingredients

    3 medium Onions chopped
    2 large Potatoes chopped
    4 medium Carrots chopped
    3 cups canned diced tomatoes
    2 tbsp Extra Virgin Olive Oil
    1.5 cups Chicken Broth
    2 tbsp Basil
    1 Bay Leaf
    3 cloves Garlic
    2 Chicken breasts chopped

Directions

Par cook onions in the oil. Add everything else. Let simmer on low for 1.5 hours. Serve!
