Savory Quinoa and Chicken

Ingredients

    2 tsp Olive oil
    1 carrot, shredded
    1 red pepper, chopped
    1 button mushroom, finely chopped
    1/4 onion, chopped
    1 clove garlic, chopped
    1 chicken breast, cooked and diced
    1.5 cups chicken broth, low sodium
    1/2 cup quinoa

Tips

Add more veggies if you have them and enjoy any variety in this dish.


Directions

Heat oil in saute pan, add veggies and cook until soft. Add chicken and start to heat then sprinkle quinoa over and let saute for a couple minutes. Add broth, cover and simmer for 10-15 minutes until broth is absorbed. Enjoy.
