A delicious, easy, and healthy way to enjoy some fairly authentic Chinese food A delicious, easy, and healthy way to enjoy some fairly authentic Chinese foodNumber of Servings: 4
Ingredients
-
24 small vegetable dumplings -- I used Wei-Chuan Pre-Steamed Vegetable Dumplings that I found at my local Asian grocery store. These dumplings have about 30 calories a piece.
4 cups low sodium vegetable broth
1 cup chopped green onions/scallions, or just get 5 or so green onions and chop them up and use all of it
1-2 tsp ground ginger
Directions
In a large pot, heat water to a boil. Add your dumplings, boil for 2-3 minutes.
In a separate pot, heat the vegetable broth to a boil. Add the dumplings (not the water), green onions/scallions, and ginger.
Put into 4 bowls, 6 dumplings each along with an equal amount of soup. Enjoy!
