Anita's Crustless Spinach Quiche

Ingredients

    1 pkg. (300g) frozen chopped spinach, drained (or use equivalent fresh)
    1/4 cup chopped onion
    1 cup 1% cottage cheese
    1 cup shredded cheese, cheddar or combination of cheddar and parmesan (or cheese of your choice)
    1/2 cup 1% milk
    2 eggs
    1/3 cup whole wheat flour
    1 tsp baking powder
    1 tsp dried basil
    1/4 tsp ground nutmeg
    3 slices bacon, cooked crisp and crumbled (optonal)
    ground pepper to taste

Directions

Spray a 9 inch pie plate with non fat cooking spray. Combine in a bowl, spinach, onion, cottage cheese, bacon (if using) and shredded cheese. In another bowl, whisk together milk, eggs, flour, baking powder, basil, nutmeg and pepper.
Pour egg mixture over vegetable mixture; mix well. Pour into prepared pie plate. Bake at 350 oven for 45 minutes or until knife inserted near centre comes out clean. Let stand for 5 minutes before serving.
