Tomato Vegetable Spicy Soup

Number of Servings: 10

Ingredients

    2 32oz boxes of low sodium chicken broth
    1/2 of a bok choy cabbage
    10 fingerling potatoes
    1 cup of celery
    1 cup carrot
    1 28 oz can crushed tomato
    1 block extra firm tofu (squeeze the water out)
    1 tblsp salt or to your own taste
    Crushed pepper
    5 finely chopped deseeded Thai chili peppers from the garden
    1 tblsp chopped parsley to garnish

Tips

The ingredients can also be combined in a crockpot, just make sure the potatoes are cooked through


Directions

Chop all the veggies into bite size pieces and put all ingredients in a pot. Simmer on low for about an hour or until potatoes are tender.

Serving Size: 10 hearty bowls
