Bunny Fluff

Introduction

This is a great dish that feels exotic. I tasted it at a South African restaurant and fell in love with it. My kids love it and it is an easy way to get your fruit and veggie servings! Ingredients

Ground beef, extra lean, 16 oz
    Carrots, raw, 2 cup, chopped
    Onions, raw, 1 cup, chopped
    *Potato, raw, 2 cup diced
    Garlic, 3 cloves
    Stewed Tomatoes, 1.5 cup
    Raisins, 1 cup, packed
    Curry powder, 1 tbsp
    Banana, fresh, 1 cup, sliced
    Coconut, raw, 1 cup, shredded
    Mangos, 1 fruit without refuse
Don Pablos Pico de Gallo, 8 serving

Tips

You can make bread rounds into a bowl and serve the bunny fluff in it. This also makes a great sandwich!

Directions

put the carrots and potatoes in a pot of water to boil. Boil until almost done.
While the veggies are boiling, cook the Ground beef, onions, and garlic until the beef is done. Add the drained veggies, tomatoes with the juice, raisins, curry powder, and enough water to make it a little liquidy. Cook on stove top until the flavors mingle.

serve with a crusty bread (not in nutritional values) banana slices, chutney, coconut, and mango pico de gallo.
