Lisa's Quinoa Fruit Salad

Ingredients

    *365 Organic Quinoa, 1 cup cooked
    Strawberries, fresh, 1 cup, sliced
    Cranberries, dried, sweetened (craisins), 0.5 cup
    *Clementine, 2 small
    Blueberries, fresh, 1 cup
    *Lemon Juice, 1 fl oz
    Honey, 1 tbsp
    *Fresh mint leaves, chopped, 1 tbsp

Directions

Cook your quinoa. Drain and set aside to cool.
Cut your strawberries and section your clementines and wash your bluberries.
Whisk together the lemon juice and honey. Sometimes I add the juice of a clementine to this too.
When quinoa is cooled, mix all ingredients except mint.
Sprinkle mint over the dish and refrigerate for a few hours for best results. Can eat immediately, but flavors blend well with refrigeration.
