Very Veggie Homemade Tomato Sauce

Introduction

I usually use this for canning so the measurements are for a very large batch. Will fill several quart jars for a water bath. I usually use this for canning so the measurements are for a very large batch. Will fill several quart jars for a water bath.
Number of Servings: 6

Ingredients

    30 Tomatoes, chopped
    3 c. Mushrooms, sliced
    2 Green Bell Peppers, chopped
    1 Onion, chopped
    2 tsp. minced garlic

    **Red Pepper Flakes or Crushed Red Pepper and Oregano to Taste

Directions

1.) If canning, prepare jars and lids in a hot water bath.
2.) Cut tomatoes and remove seeds. Cook in a large pot. Bring to a boil.
3.) While tomatoes are cooking, cook mushrooms, onion, green pepper and garlic in a medium pan until done.
3.) Add cooked vegetables to the tomatoes and simmer for about 20 minutes, stirring often.
4.) If canning add 1 Tbsp. Lemon juice to bottom of each jar. Fill jars leaving 1/2 inch head space and finger tighten lid/bands.
5.) Process jars in water bath for about 35 minutes.



Serving Size: Makes about 3 pints
