Escarole and Beans (Scharole e Fagioli)

Number of Servings: 6

Ingredients

    Approx. 1 c. water
    2 cloves crushed garlic
    1 tsp. olive oil
    1/4 tsp. crushed oregano
    1 large head escarole
    1 15.5 oz. can Joan of Arc Light Red Kidney Beans

Directions

Cut head of escarole in half, separate, & wash thoroughly in cool water, removing all sand or dirt.
Place in 3 quart pan with about 1 c. water
Bring to a boil, and cook until reduced and almost tender (time will vary between 15-30 minutes).

In a separate 2 quart pan, brown crushed garlic in olive oil; then add entire contents of can of kidney beans and oregano. Simmer 15-20 min.

Remove cooked escarole from heat, drain in collander, and add to kidney bean mixture.
Simmer for an additional 30 minutes.

Makes approx. 6 1/2 cup or 3 1 cup servings.
