Portion Control Mealtloaf

    1lbs. lean ground beef (96%)
    2 Tbsp. ketchup
    2 tsp. worcesterchire sauce
    1 egg or substitute
    1 oz lite cheddar cheese (I used a blend cheddar cheese)
    1/4 tsp pepper
    1 dash salt
    1/4 tsp. Italian Seasoning
    1 slice whole wheat bread, toasted and ground into bread crumbs

    1 tbsp. ketchup

    Optional toppings: cheese or fried onion rings


Preheat oven to 350

Spray 4 6 oz ramekins or oven safe dishes with cooking spray and set aside.

In a bowl, mix all of your ingredients (except for the toppings) and mix well until combined. I used my my hands.

Evenly divide the beef mixture into 4 equal parts and place into ramekins.

Place in oven for 30 minutes. Brush remaining ketchup and add any additional toppings at this time.

Bake for an additional 10 minutes. Once done, let the meatloaf sit for a few minutes.
