DelMonte Italian Stewed Tomatoes, 14.5 oz (process in Cuisanart)
Hunts 1Tomato Paste, 2 tbsp
Onions, raw, 1 large chopped
Sorrento Part-Skim Ricotta Cheese, 8 oz (
grated cheese, pecorino romano, 3 tbsp \
Pasta, cooked, 8 oz
Mozzarella Cheese, part skim milk, 2 oz
Add tomato paste & stir about a minute.
Add bay leafs, chicken broth, chopped stewed tomatoes, & bring to boil, simmer about 30 minutes, adding dry pasta in the last 10 mins.
While pasta is cooking combine ricotta, pecorino romano, mozzarella , salt & pepper
Drop a dollop of cheese mixture in bottom of bowl, & ladle soup over.
Serving Size: makes about 5 servings of 1 cup 1/2
